Have you tried setting page orientation to Landscape and the number of columns to 2 in the Page Setup group of the Page Layout tab of the ribbon?
Word also has the option to print multiple pages per sheet:

Ok, you've pointed me in the right direction. However, as the page is now printing two columns in the direction I want, I now have two more problems.
1. The printing is only occurring on about four to five inches instead of the eight inch height the paper is now at. How do I get the printer to utilize the full eight inches?
2. The two columns are too close to each other. How do I get separation so that the two columns utilize the full five & one half inches each page should be?

1) Make sure that you have set the correct paper size. Also check the page margins.
2) Select More Columns... from the Columns dropdown on the Page Layout tab of the ribbon.
You can set the spacing between the columns here:

Hi all. I changed the paper size to 8 1/2 X 11. I now have both columns using the full sheet of paper. My next problem is that I can't move the left margin over to where I need it & still have it in the printable area. The only thing I can think of is to physically trim the paper. I guess this is why book publishers charge what they do. They spent a ton of money on the right software & machinery! :)

What size left margin do you need. The minimum dimension will be set by the printer that you are using, and if it is an ink-jet printer in which the paper is pushed through the printer, the bottom margin usually needs to be larger because the printing has to cease before the paper has exited from the pinch rollers.

Well, thanks to all your help I did it. Sort of. On every single individual page I have to supply the following:
Page layout, size, custom, width & height (I have to set the width to 10 even though the paper is 11. Guess I have to account for the other inch for the margins!?), columns, left margin, & gutter. Then I have to go back in, install a footer to enter a page number. Then I have to delete all the text so only the page number gets printed. This means I have to run each single sheet of paper through the printer 2 times By any chance, is there a more simple way to do this other than paying Staples $50?

It should not be necessary to do this unless every page is a separate section, and even if that were the case, you could change these settings in the Page Setup dialog with "Whole document" selected for "Applies to." There should be no need to go to the columns dialog at all; as explained, the "2 pages per sheet" setting has nothing to do with columns.
