Dark mode in the Mac OS is excellent.
Dark mode in office 365 for Mac is poorly implemented (IMHO) ... how do I turn it off?
I need to have compatibility with Windoze 365 (educational videos and screenshots etc.)

I did get this terminal workaround to work for me but capitalized the app names.

I've tried the above and this is not working for me. Outlook still starts in Dark mode! :-(

Please ensure your apps are completely shut down (if you're unsure, restart your computer and don't open any apps when you login):
Open Terminal and run the desired command below: For Outlook: defaults write com.microsoft.Outlook NSRequiresAquaSystemAppearance -bool yes For Excel: defaults write com.microsoft.Excel NSRequiresAquaSystemAppearance -bool yes For Powerpoint: defaults write com.microsoft.Powerpoint NSRequiresAquaSystemAppearance -bool yes For Word: defaults write com.microsoft.Word NSRequiresAquaSystemAppearance -bool yes Once the desired commands above have been run, execute the below(this should be the last command executed): killall cfprefsd

EDIT: If you would like to from aqua to dark mode, replace yes with no
