If you don't have/select ink the option is greyed out.

"onenote assumes that the ink is a drawing that is why you can't convert to text. First you need to select the ink, right click and select "treat ink as handwriting". Then you should be able to convert to text." Thanks fgruber on mobileread.com.

Why it allows you to Ink to Math without doing that makes no sense at all.

I have the same issue, and there is no option for "treat ink as handwriting." I was using a note that was scanned in, does it need to be a certain file type for OneNote to use "convert ink to text" correctly? I saved it after photoshopping to good clarity as a .bmp, also tried sending from Adobe acrobat Pro directly to OneNote. I'm getting a little frustrated. Please someone HELP!

Go to DRAW menu, on the right hand side of the pen styles there is an inverted triangle which activates a drop down menu. Click/select it and then at the bottom you will see 'Pen Mode'. Click/select 'Pen Mode' and options for 'Create drawings Only, Crate Handwriting Only or Create Both will appear. Just select from these options.

I have tried all of this but still am unable to convert ink to text.  the handwriting option is not available when I select the ink even though it is selected under the pen settings.

Any help would be appreciated!

Isn't there anyone from Microsoft reading this and can answer? Why are they silent? I have tried what was suggested above and still have convert ink to text grayed out.

I agree. I have accessed Microsoft twice with this problem and no progress. This morning it converted some files, much to my surprise, and then stopped again. The keyboard has the pen symbol grayed out also
