I'm sorry, there is no option in Edge yet to easily prevent or disable it. However, please try the following methods below if it helps.
1. Open Edge then copy and paste this to the address bar
edge://settings/search
Press Enter
Search engine used in the address bar = select your preferred search engine from the list.
Click manage search engines
Find Bing in the list then click the 3 dots next to it
Click Remove
2. Disable or Uninstall Edge extensions
Open Edge > Click 3 dots > Extensions
Please check if one of your Extensions is forcing your search to use Bing.
If this doesn't work, you may need to consider performing a Reset of Edge Chromium.
Open Edge then click 3 dots > Settings
Select Reset Settings > Restore settings to their default values
Click Reset
Restart your computer

Hello John,
I think that what Padipoo is asking, is that Windows itself suggest from time to time to reset our default search back to Bing. It doesn't comes from an extension but from some sort of "Windows Experience" thing I guess. It usually happen after a Windows Update - I'm not sure. If for some users it could be useful to get rid of a bad search engine that been pushed to them from a malicious way, I'd wish that if I choose something okay, like Google or DuckDuckGo, that we'd be excluded from changing back to Bing.
