You might try this:
[1] Be sure you have at least one back-up copy of your problematic Word file.
[2] Open your problematic Word file.
[3] Click on File -> Options -> Save.
[4] If the box for "Embed Fonts in the file" is checked:
[4.1] Un-check that box.
[4.2] Click OK
[4.3] Click on File -> Save.
[4.4] Close Word.
[4.5] Re-open your Word file, and see if the above has helped out any.

I've also noticed that Word often doesn't save changes to my template. When I enter changes, it does ask me if it should save them. I always tell it to save. Sometimes it does. Sometimes it doesn't.

You might consider abandoning your use of the New Century Schoolbook, and use one of these fonts instead:
I think that the above seven fonts are among the most commonly used fonts. I did a quick test, and in my installations of Word 2013, 2010, 2007 and 2003, these fonts all are available. Also, in the Microsoft Word Web App, these fonts are available. The New Century Schoolbook font is used rarely, compared to the above seven fonts. In general, I would recommend that anyone use fonts that are in popular general use, and avoid rarely used fonts. One way to tell how popular a font is, is to do a web search, and see how many hits you get. For example, Times New Roman gets about 38,000,000 web hits. New Century Schoolbook gets about 60,000 web hits. I used Google for this web search. My idea is that by choosing among the most popular of the fonts, this will avoid various problems that can happen, due to using a font that is rarely used.

My Word 2010 installation has a font called Century Schoolbook. Perhaps that font would work (without the "New"). Also, the Times New Roman font seems to me to be very similar to the Century Schoolbook font. Maybe you could use Times New Roman, and to the switch to New Century Schoolbook font at the very end of your work, just before giving your document to the publisher.

According to http://www.microsoft.com/typography/fonts/font.aspx?FMID=1094, Century Schoolbook (regular, bold, italic, and bold italic variants) has been provided with Access 97 SR2, Creative Writer 2, Office 2000 Premium, Office 2007, Office 2007 Professional Edition, Office 2010, Office 4.3 Professional, Office 97 Small Business Edition SR2, Office 97 SR1a, Office Professional Edition 2003, PhotoDraw 2000, Picture It! 98, Publisher 2000, Publisher 2007, Publisher 97, Publisher 98, and TrueType Font Pack. So this means that, assuming you installed all the fonts when you installed Office, you should have it installed. The filename of the regular variant is CENSCBK.TTF. Before you do anything else, make sure that you do have this font installed.
Now check the Fonts folder for other similarly named fonts; you can search the folder for "Century" or "Schoolbook" to find them. Perhaps you can find the interfering font (which will presumably not be the Century Schoolbook that is installed with Office) and uninstall it.
As for New Century Schoolbook, this is a commercial font that you would have to purchase (see http://www.myfonts.com/fonts/linotype/new-century-schoolbook/). If you've already purchased it, then it should also show up in your Fonts folder. If not, ask your publisher whether Century Schoolbook (the one that comes with Office) is an acceptable substitute.
