Cannot add email account to Outlook 2019 where the username is not the email address

I have an email account I am trying to add to Outlook where the username is just the xxx from *** Email address is removed for privacy ***.  It fails to add the account being unable to authenticate with the IMAP server.

This is not an issue of 2FA or anything else - I run the email server myself.  Why isn't it possible to amend the username as it always has been with previous versions of Outlook?

How can I work around this to input the username rather than have Outlook stupidly assuming that nobody could have a username which isn't the same as their email address?

Open control panel mail - you can use the /manageprofiles switch to open it - right-click on the Start button and choose Run or press Windows key + R to open the Run command.
Type or paste the following into the Open field and press Enter or click OK to restart Outlook. (There is a space before /.)
outlook.exe /manageprofiles

Try adding your account there, choosing the manual setup option.
