Uproof and proof folders - custom dictionary

What is the difference between these two folders and and why does a computer have both?  From what I read the custom dictionary should reside in the proof folder on a windows 7 machine but I am finding they are being held in the uproof folder.  Any insight would be helpful.

The Proof folder is used by Office 2003 and earlier. The UProof folder is used by Office 2007 and later.

The technical difference is that the dictionary file(s) in the Proof folder uses the older ASCII character encoding, and the dictionary file(s) in the UProof folder uses Unicode encoding (hence the 'U').
