Windows 8 Start Menu, and access to applications

I am new to Windows 8, so here are my questions:

(1) Is it possible to reconfigure the Windows 8 Start Menu so that all the applications are listed in compact alphabetical format, minus the logos?
(2) Does anyone know the location that contains all the computer applications? (I. e. how do I skip the Start Menu to get to all the applications?)

It's already there.   From the Start Screen press Menu, CursorLeft, Enter (and optionally Ctrl--)
