Here's the trick... Don't fully cook the eggs on the stove-top. Instead, take your omlette off the burner & put it under the broiler for a minute or so. It will fluff up nicely. Also, don't flip it in the pan. There is absolutely no need to do this. Simply
place your fillings on half the omlette, then when it's done, slide the omlette (filling half first) onto the plate & fold the other half over as it comes out of the pan.
