Each of you would need a gold account to access online MP, party chat etc.
The cheapest option to do that would be the 'Gold Family Pack'.  This gives you 4 gold memberships and works out less than the price of 2.

Or you could create free silver accounts for your kids to use, but they will not be able to use party chat or play MP games online.

Everyone can make their own xbox live profile but each one has to have

1. Its own windows live ID

2. To play online the account must have gold. if you make an account it will be silver unless it prompts you with somthing like : "this account is eligble for a free month gold trial. (this only works on the xbox, not on Xbox.com and each xbox 360 gives 3, 1 month trial for every new account made. and each account has its own membership to gold so the family pack is a good way to pay for family gaming :)

Hope this helps
