Just wondering ...

Is there a difference in “computing hardware“ in Xbox versions? i.e. Does a newer Xbox 360 play a more complex game in higher definition or are developers told to keep it playable for original Xbox 360s?

Aside from reduced power consumption and more stable hardware, there's no in-game difference between newer and older Xbox 360 consoles that I am aware of.
