I have not had this problem before i am plugged into HDMI into my HDTV and the controls are delayed. The audio and video are not delayed at all but the controls are off a bit and you can feel if it gameplay the controls feel either to stiff or to loose.

What TV do you have? Does it have a 'Game Mode' or a 'PC Mode'? TV's with 100Hz refresh rates can cause input lag as the TV does it's own video processing to reduce film based judder. This is fine for TV and film viewing, but it's best that any extra video processing modes to be disabled when using the 360 or any game console for that matter.

If you have Game Mode, enable it as it will reduce input lag. If you don't have that feature, then don't use the HDMI cable, use another cable like component. (If you are sure it's because of the HDMI cable).
