I am running the following.

SONY Bravia KDL-37w5500

SONY DAVD-Z660 Surround Sound System

XBOX One

I run an optical cable to the surround from the TV

I run HDMI Leads from both xbox & surround to the TV

My old 360 used to send surround sound via HDMI.

I only get 5.1 when plugging the optical cable directly into the surround sound from the XBOX

Hugely annoying as then I get no TV volume when I turn the XBOX off!!!

Constantly having toi fiddle swapping the optical cables over!!!!!!!!!!

I'm trying to understand better, so to clarify, you have an optical cable going from the output on your TV to the input on your surround sound system. Then you have your xbox one connected to your TV through HDMI, and you aren't getting sound output that way? The Xbox One does output sound via HDMI, so if you didn't have the optical cable connected to your surround sound you would still get sound output on your TV from your Xbox One. You may need to change the sound settings on your xbox one.

At the moment the Xbox One doesn't support compressed 5.1 audio over HDMI, which may be your problem. You can try changing it to the other options listed here: support.xbox.com/.../configure-audio-settings , I would probably start off with stereo uncompressed & see if you get audio and go from there. We'll see a compressed 5.1 audio setting added in a future update I'm sure, but at the moment it only supports uncompressed.
