Email layout and display in Windows 10

On Windows 10 I have my 3 email accounts grouped in one place.  But I can't seem to change the way in which my emails are displayed.  You can't change the order of emails (most recent at top or bottom etc.) and can't widen the panes with your mouse as you used to be able to.  Also can't see how fonts can be changed.  Can you help

To understand the issue better, I would like to know how do you access emails through web browser or through a mail client (mail app, outlook 2010/2013)?

I am using the mail app on Windows 10 - it allows you to keep all emails accounts in one place.  But I am finding it really inflexible.  You can't insert an email signature (with a logo etc), you can't change the display or layout, and you can't create new folders.

I to recently changed my Hotmail acct, from Live Mail to outlook using windows 10 app. I hate the layout and hate the fact you can only close sections of the layout and not resize them.
