I know support for Windows XP is ending (Microsoft has said it 1,000,000,000 times) but when will support for Windows XP embedded end? I heard 2016 is this correct?

When support ends for Windows XP, you will not receive security updates. You can still operate but the security risks will be greater.
Is your system capable of upgrading to Windows Vista or Windows 7? I personally would advise purchasing a newer computer.
Check eBay for Windows CD Roms or a newer computer system

I don't advise upgrading the system. It's older model, drivers may or may not be available. There'd be more than the OS to upgrade - power supply, graphics card, et...
Cheaper to look for a refurbished Windows 7 computer or even a Windows 8. Whatever your decision, I wish you luck.
