Why I don't have UEFI Setting in WinRE?

The Settings are in UEFI Setup accessed one of these ways:

Keep in mind that when booting media you must choose it as a UEFI device in the BIOS/UEFI Boot Menu as exemplified below:

Hi, PI_Daniel,

Verify if your system has UEFI firmware.

In Cortana Search bar type MSINFO > Press Enter

Look for Bios Mode parameter > Is the  value set to UEFI?

If you don't see UEFI and you've had it appear before, check with the computer manufacturer for UEFI version update.

It is Legacy. Now I don't use UEFI? my motherboard is P8b75-v and support UEFI.

If it says Legacy in System Information that only means that you have WIndows installed in Legacy Mode, so those added settings wouldn't appear.
powering up the PC
To check if you a have a UEFI or Legacy BIOS enter Setup by powering up the PC while pressing the key given in this link: https://www.mydigitallife.net/comprehensive-lis...

Check through the Settings to see if there is UEFI, CSM or Legacy BIOS, Secure Boot, Fast Boot or any other settings that would indicate it has the modern UEFI BIOS. If not then it does not. If so I would reinstall in Legacy Mode to have the advanced UEFI Security protections.

I did convert to GPT with MBR2GPT command.

Now I have a new Boot priority(Windows Boot Manager) and I should select it to log in windows. This is correct?

Yes, but be aware MBR2GPT is only a workaround and not as certain as reinstalling to a properly reformatted GPT disk.

Start with only the SSD plugged in to see if it works.

Then add the HDD to see if it interferes. It should not if it doesn't have UEFI boot code that can confuse the BIOS.
