After trying everything else (including trying to manually update the drivers for iPod), I finally decided to switch out of S mode of Windows. That did the trick. Launching iTunes with the iPod connected will then immediately ask for permission to add iPod
driver support, and everything works as it should. No need even to uninstall/reinstall iTunes.
Switching out of S mode is pretty quick. I expected some major installation, but it was actually done within a few seconds really.
