I think your Disk might be defective which is why it isn't visible in the Destination drives list.
Could you please boot in to UEFI Settings of the computer and ensure VMD is turned off? It would be under the Storage menu. Save the changes if you found the option and start the setup again.
Another good idea to check in BIOS UEFI menu is the disk itself, see if the disk shows up in UEFI BIOS.
