I have already changed the icons for a number of other apps, as can be seen in the image, but I can't find any info on how to change the Start button icon or the mail app icon. I want to put my own ones there, on the taskbar and start menu, everywhere. Any help would be appreciated.

I had a look at the links you sent, but I don't really want to buy StartAllBack or Start11 or anything. As you mentioned in your message, you might have some more suggestions, so if you could try them out, I would appreciate it.

Link 1 was just saying that only 3rd party apps were the only way
Link 2 was about 3rd party apps, but the ones mentioned there either cost or don't work
Link 3 did get me to the point where I found the section for the Mail app in WindowsApps folder, but I don't really know where to go from there.
Link 4 didn't really help, because the instructions in it don't work for Mail, and don't refer to Start button.
And link 5 was about a paid 3rd party program.
If you have any info on how to swap icons from in the WindowsApps folder, that would be helpful, but otherwise, the links didn't help too much.

Once you get into WindowsApps folder, find the Mail & Calendar folder, then the Images folder. You can take ownership of all of these using this handy right click shortcut which installs a Take Ownership shortcut to your right click menu to use in cases like this on files and folders which won't cooperate: https://www.tenforums.com/tutorials/3841-add-ta...
The only warning is to not use it on C:\Windows folder files as this will compromise security.
