Edge is an integral part of Windows, the best option is to take it off the background apps and delete all shortcuts to the application . . .
To remove it from background Apps, in Windows 10, open the Settings App, go to Privacy - Background Apps and turn off Microsoft Edge
However if you do want to remove Edge from Windows 10 this is the most reliable method:

I am Vijay, an Independent Advisor. I am here to work with you on this problem.
Complete uninstall will not be possible as Edge is tightly integrated into Windows 10. But you can disable it.
Copy below > Windows Key+R and paste into Run window and Enter
C:\Windows\SystemApps
Now locate the folder Microsoft.MicrosoftEdge_8wekyb3d8bbwe
Rename it to something else say Microsoft.MicrosoftEdge_8wekyb3d8bbwe_Old
Now, Edge will no longer work.
In future if you need to enable it again, just restore the name of the folder back. So, I will remove _old from the folder name above.
Note - A feature update may bring back Edge. In that case, you will need to do the above steps again.

You can't disable/uninstall Microsoft Edge, as it is integral part of Windows 10 OS.

How can I disable Microsoft Edge in Windows 10?
No need. Don't like it? Don't use it. Simple. It doesn't do your computer any harm by merely being there. If it bothers you so much that you don't even want to see its shortcuts, follow Dave's advice to remove them.
You might have heard that Microsoft Edge is getting big changes. Relatively few people use it, even after Microsoft tried everything to get people to try it, so Microsoft is finally throwing in the towel. They are replacing the EdgeHTML rendering engine with the Blink rendering engine from the Chromium project - that's the same rendering engine that Chrome uses.
That can only mean good things for Microsoft Edge, so stay tuned.
