If you right click image files and choose open with - More apps, do you not get the option to open the image files with View NX 2 and if you check the box marked 'Always use this app' - that will set View NX 2 as the default viewer for those type of files
You can remove the Photos app altogether:
Right click your Start Button, choose Powershell (admin)
Run this command and hit Enter:
Get-AppxPackage *photos* | Remove-AppxPackage

I also have ViewNX 2 installed and it does not appear in the list of available viewers in Settings. However, nothing prevents you from right-clicking an image file, selecting Open with>Choose another app>More apps>Choose another app on this PC, browsing to C:\Program Files (x86)\Nikon\ViewNX 2, selecting ViewNX2.exe, and checking "Always use this app".Thanks, I will have to try this, perhaps it's that I was just not geting the last part of this sequence by browsing to look for ViewNX2 on the C:\Program Files, etc., & selecting to "Always use this app".

If you open Start > Settings > Apps > Default apps > Photo viewer
Click the current app listed as your photo viewe then choose View NX 2 from the list
Thanks for taking the time to reply. I have tried this multiple times, but the problem is the ViewNX2 is not in the list, or no longer in the list if it was at one time. I have a suggestion from another responder that may work for me. Thanks!

Yes, the problem is it doesn't appear in the list. Brian Tillman offerd a different approach I'm going to try & hope that works. Thanks for the info on uninstalling Photos. I did remove all my files from Photos so it's now empty. After I make sure I have ViewNX2 set up as my photo viewer I'll do that. I'm not very computer savvy, but I try & will dig deep to fix things I don't like. Having a limited understanding I was also concerned about losing all my photographs if I uninstalled Photos. As it's empty now I assume that can't happen.
Thanks everyone for taking the time to reply, I appreciate it. Diane

Thanks for the tip Brian. After a few attempts I was able to get View NX2 in use as my Photo Viewer outside of actually being in View. The process wasn't exactly as you posted it, but somehow I made it happen, & ViewNX 2 is also now showing up in my list of available apps to use as well. However, for some reason a check box for "Always use this app" never showed up. Go figure, it seems to be working anyway...
