Hi!
Go on your desktop:
1. Right clic -> New -> Shortcut
2.
%windir%\explorer.exe microsoft-edge:http://www.WebSite.com
3. Modify Icon as you need. Done.
Exemple for an Edge Facebook Shortcut on desktop:
%windir%\explorer.exe microsoft-edge:https://www.facebook.com
Note: If a shortcut don't work, try to add "..." around URL, like that:
%windir%\explorer.exe microsoft-edge:"https://www.facebook.com"

Oops, that's not the correct behavior imho.
Try to go to Windows 10 settings -> Apps -> Default Apps
Change your default browser (if you have Chrome as default, use Edge, else another one...).
I suggest to restart PC here…
Go in Windows 10 settings again, and revert to your favorite default browser.
Are shortcuts now opened correctly using Edge? Or always this bad behavior with explorer?

Now how hard would it be for Microsoft to build in a section in Edge that could be dragged to a location to make a shortcut ?
This has been requested from day one of Edge on Windows 10 early betas....So, it's just a case of Microsoft not caring what the people want...

Any update on this ? Is Microsoft going to fix this "bug" that is available on every other browser on the market ?
Even IE has this...
