Change color of text in Windows 10 start menu

The text on my start menu is really dark making it near impossible to read at times (it grows darker sometimes and lighter other times).

How can I set this so it will stay white all the time?

I add a screenshot of how it looks at the moment, try to read the icons!

I think the best way to go about it would be in the personalization options you have in the screenshot, turn off the "Automatically pick an accent color from my background". This will give you the option to manually pick what color the tiles will default to and be able to stand out more.
