Hi Robin,   

Sorry for delay the reply for OOF reason, may I confirm if you want to disable screen sharing in Teams? 

If so, we can create a new meeting policy in Microsoft Teams admin center and disable the screen sharing feature in the new policy, then assign this new policy to the specific users. Below are some screenshoots for your reference: 

1. Sign in to Teams admin center and go to Meetings > Meeting policies, click + to create a new policy like below picture: 

2. Then go to Users, select the user and click Policies > Edit > Meeting policy > select the new policy that doesn't allow screen sharing and click Apply:
