Based on your description: Outlook keeps freezing. I would like to cooperate with you working on this case. To clarify this case, do you mean if refers to Microsoft 365 Copilot or Windows Copilot which caused Outlook freezing case? If refers to Microsoft 365 Copilot, you may contact your Microsoft 365 admin and help to remove the assigned license of your email account to disable this feature normally. If refers to Windows Copilot, you may try below workaround to disable this feature and check if make your Outlook client stop freezing. Copy and paste in the command below as admin level and press enter:
reg add HKCU\Software\Policies\Microsoft\Windows\WindowsCopilot /v TurnOffWindowsCopilot /t REG_DWORD /d 1 /f
