this is a workaround for every email I compose.
every time I create to reply to an email. after typing the first character/text the "special character" appears and in order to continue I need to 'click' and disable it. however sometimes after disabling it, the text disappear and I need to close the email and start again

First of all, please make sure you have the latest version of Outlook for Mac. You can click Help > Check for Updates to apply the newest version of Outlook. For your reference:
Update Office for Mac automatically.
Meanwhile, I heard that some community members who have similar problem with you solved their problem by deleting the file named "MicrosoftRegistrationDB.reg" in ~/Library/Group Containers/UBF8T346G9.Office. Then empty the trash and relaunch Outlook to check the results. You can give it a try see if it can help.

Have you tried if delete the MicrosoftRegistrationDB.reg file was helpful?
Meanwhile, you also try to use OutlookResetPreferences tool to reset Outlook settings to default see if it can help.
If the problem persists, please kindly provide us a screenshot of your Outlook for Mac version for further investigation. See Outlook > About Outlook.
