This is my calendar interface; may I know does it look like yours? I am using the Outlook for enterprise version 13530.20376 (current Channel). Reference for you: Update history for Microsoft 365 Apps (listed by date) - Office release notes | Microsoft Docs
If your calendar looks very different from mine, I hope you can share a screenshot of what you see, so that I can know your specific scenario. In the meanwhile, please provide a screenshot of Outlook version, File > Office Account > entire screenshot of the Product Information. (remove the PII please).
In addition, if you want to revert to the previous version of Office, you can refer to this official article: https://support.microsoft.com/en-us/help/2770432/how-to-revert-to-an-earlier-version-of-office-2013-or-office-2016-clic

Hi,
Below is a jpeg of my calendar. See how each listing now has a yellow edge and a number for the items not shown? It is so distracting and completely overshadows my own, critical to me, color coding. I'm not sure if my organization will let me back out of this update but I'm about ready to beg them. Thanks for your interest.

I guess maybe it accidentally marked yellow category for these events, I suggest you check this, see my screenshot:
In the meanwhile, may I know your Outlook version, File > Office Account > Product Information.
