Outlook 365 categories missing

the outlook client in my office 365 does not have the categories option in the menu bar.  It used to.

Which mail account type are you using?

When you are using IMAP, the Categories feature isn't available as IMAP doesn't support synching Categories.

The Categories feature is supported when using a POP3, an Exchange or an Outlook.com account type.

Please check first you are not using your account through IMAP Protocol, see:

If this is not your case check you don't any third party add ins corrupting the Outlook app. Disable all and try to use categories:

Check also is creating a new Outlook Profile and add your account again the issue is fix:
