Adding a task to follow up on an email seems to be a tedious process now with MS365. Is there an easier way to create a task rather than creating it from scratch? When using Outlook desktop app, we used to be able to drag and drop to do so, but not in MS365.

May I please confirm the outlook version you are using? What version of Outlook do I have? - Microsoft Support
In the outlook classic desktop application, you can click the message and drag it to Tasks on the navigation bar. Create a task from a message - Microsoft Support
Just in case you are using the new outlook version, you can use the My Day pane to create a task from an email message. (Open the My Day pane by selecting My Day on the toolbar at the top of the page >Find the message that you want to create a task from in the message list >Select and drag the message to the To Do tab in the My Day pane). Example in screenshot below.
To view and manage your tasks, select To Do from the left navigation pane.
This is similar to outlook on the web, please refer to this article. Use Tasks in Outlook on the web - Microsoft Support
