I've found several people reporting the same issue, with no definitive answer.
While trying to figure out why mail was being flagged as spam, when sent to an outlook.com address, I discovered that Office365 is marking the messages with dkim=fail, when that's not the case.
Apple, Gmail and Proton show
dkim=pass
yet Outlook.com shows
dkim=fail (body hash did not verify)
In the message headers.
This makes absolutely no sense, that 3 of the most well known email providers correctly verify the DKIM signature, but Microsoft doesn't.
Could someone please enlighten me?

There are possible reasons why you encountered this issue when sending emails to Outlook.com domain accounts. It may be caused by the IP address being read or the header of the emails are being read by the Outlook server as Spam. For us to help you with your concern, we suggest that you try to fill out the Outlook Delivery form / New support request (office.com)

I already submitted the same question via that form yesterday, only to receive a canned and completely unrelated response, about IP reputation.
Unfortunately, this has always been the trend when submitting support requests to Microsoft. Support staff clearly don't read the submissions, preferring to ignore them with unrelated responses, which is frustrating. Apple, on the other hand, reply in context, within a day, making resolution quick and painless.
The bottom line:
Microsoft's servers are flagging correctly signed messages with DKIM=fail, when they're perfectly legitimate, as explained in my original post.
After receiving the completely irrelevant response from Microsoft yesterday, I chose to post here, hoping to catch someone's attention. Someone willing to read the actual post and issue being reported, hopefully with some insight into how MS is altering inbound messages.
The only possible explanation for a failed verification of the body, is that somewhere along the route, Microsoft is altering the body prior to delivery, and only then checking the DKIM validity. This might be a hidden newline character, for example. The fact that Gmail and Proton correctly flag the body as valid, with DKIM=pass is evidence if any is required.
