Hello, Joep6601
Glad to see you in Microsoft Community.
Have you tried changing the appearance in Outlook settings? To do this:
1. tap in the upper left corner
2. tap in the bottom left corner
3. Under Preferences, tap Appearance
In Apperance, there are 4 options: Theme, App Icon, Office Themes and Pride
You can change these options to customize the appearance for Outlook app.
To access the appearance settings, make sure you are using the latest version of Outlook for iOS.
If changing Outlook appearance doesn't meet your needs, please let me know how you want to customize "the color of mailbox icons" in screenshots.
Feel free to reply if you have other concerns.
Best regards,
Yuhao Li| Microsoft Community Support Specialist

Hello Yuhao Li, thanks for the response. Unfortunately this is not what I am looking for.
I would like to change the color of the circles of each mailbox. That is, in your screenshot #2 above: I would like to chnage the color of the red circle with the "M" and green circle with the "G".
Any way of doing that?
Thanks again for your response.

The icons you are referring to are actually contact photos. If user doesn't upload a photo, then the contact photo will be the one you see now, which is generated by Outlook automatically. Since the contact photo are generated automatically, there is no way to change the color; unless you upload your own customized picture, for which you can change the color.
If you have a better idea about this, send feedback or suggest a feature. We’d love to hear from you about what’s working well, what’s not, and any ideas for improvements including possible new features and functions. Your input will help us improve the user experience for you and all Office users worldwide. To do this, Tap your profile photo and then the ? > Suggest a Feature.

Hi Yuhaio,
He is not talking about the contact photo, but rather about the mail box icons : on your picture # 2 being the red circle M and the green circle G.
It looks like the letters can be changed by changing the mail box "description" and the color itself changes quasi randomly, by changing the text lengths itself...
Too bad we can't simply edit it or add a picture/logo for each mail box .
Thank you all
cheers

I changed my outlook to green. Now I wonder if I can change the whole app’s icon to green, so in my desktop and iPhone it would show green.
Thanks

Yes, the colors of the 'account circles' vary with the length of the Description of the account.
Since in the 'account circle' only the first letter of the Description is shown, I just extended the Description of each account (Company name) with some extra characters (I used the dash '-' character) until the color of the 'account circle' was what I wanted.
It's is just a work-around, but it suits my purpose. I now have the first letter of the company name on a circle the color closest to the company logo color for each account.

Do you have any insight on how the Description length correlates to color? (Each character changes the color, or does it take a few?; Is the color progression 'linear' through a standard color palette?; etc.) I am trial and erroring it now, but its super tedious and I have 4 accounts to do, so if you have any shortcuts, it would be massively appreciated!

lol, who comes up with this stuff? What engineer or coder is like, "you know what hard working business people want? Randomized colors dependent on the length of the description of their email box... and better yet, let's not document it anywhere and just let people struggle with it!" lol, makes zero sense.

Right on the nose @Steven Hyun
I too just played around until I could tolerate the color combo. But at least we have this info.
