The Insert key is disabled by default by Word (I wonder if there actually is a rationale for). You can activate it in the options:

Office button => "Word Options" => "Advanced" tab => "Editing options" header => "Use the Insert key to control overtype mode"

You want to Overwrite words, turn on the OverType mode. You should see the Words OVR in the Status bar: double-click it to activate it. If you are using Word 2007 or Word 2010 and don't see the the Overtype option in the Status bar, right-click in the Status bar and chose Overtype to add it to the status bar.
