To my knowledge, Teams won't automatically record the meeting when the meeting starts. You must select
Start recording to manually start it.
However it would be better for you to know the recording can be initiated by the organizer or the presenters. Because in a Teams meeting, we can't make multiple recordings of the same meeting at the same time. So anyone starts the recording, the other participants
will see the recording is available even though they don't have such intention.
In a word, if you enter a meeting and find recording is started, the action should be taken by someone else.
