Is it possible to set status to offline until the end of the day? That's how I expect it to work and how other more sophisticated programs like Slack work so sometimes I'll be shown as offline for days. Not sure why this isn't default or an option that I can find.

Basically, appear offline is used to signify that you are not logged in to Teams and will not be replying until you do. If somebody contacts you, you will still get alerts.
A user may also set a duration for her presence explicitly. A person, for example, may designate herself as Appear offline till tomorrow morning. See User presence in Teams - Microsoft Teams | Microsoft Docs.
