Can't find how to turn off the WYSIWYG display in the font menu in preferences. Help!

That isn't an option in Word 2016 for Mac. It was available in General Preferences in prior versions but was eliminated in the 2016 release.
The only alternative I know of is to use Format> Font [Command+D] & use the Font list there.
Perhaps you could consider using Styles for formatting purposes rather than applying direct formatting changes.
