The overall font size in Outlook 2011 as the program appears on the screen is way too small, but most of the email messages, those being written and those received, are ridiculously small. I know I can zoom them up and so on, but is there not a way to
set the viewing size larger so it sticks and so it doesn't affect my outgoing messages when they are read on the other end?

You can set font size for HMTL and Plain text messages in Outlook Preferences > Fonts.
You can also set font size for Item Lists but you only get small, medium, large. There is no way to set font size for folder list.
