yes, you can remove it using a transport rule as an office 365 administrator. the x-originating-ip email header field is used to identify the original ip address of a client connecting to exchange online. we don’t suggest you remove the specific attribute
if the feature is not critical to your organization.
you can refer to the steps below to remove it:
1. login to eac (exchange admin center).
2. click mail flow->rules.
3. click add (+)->create a new rule… and then click more options… in the bottom.
4. select the condition and action as the screenshot shows below:
5. click save.
