It seems that the spellchecker is defaulted to US language for all my staff when it should be UK.
Can it be changed? I'm told by the IT support team it cannot and that sounds odd.

Hi Rugbycentre,
As far as I know, the language setting for Office 365 accounts is based on the country or region when registering Office 365 tenant. If your Office 365 tenant is registered in US, then the default language setting for every account is English (US). The country or region information is unchangeable because it will determine the location of your Office 365 tenant database.
However you can manually change your account language via Settings in the Office portal.
As for the language for Office apps, you can download the other language packages via the following website.

Why would it be US? It makes no sense. Every document has the US English spellchecker as default and we have to change it each time and even when the document is saved and reloaded, the language US is back.
Plus I'd also heard that we may have an issue with our data residency also being in the US and if there was a security breach we would be subject to US courts not UK.. Is this also true?

May I confirm where you find the spellchecker in Office 365? It seems I have misunderstood your situation. If it's convenience, please capture a screenshot of the spellchecker in Office 365 for us. I'd love to help you do the further investigation.
Meanwhile, what's language setting of your Windows?

We use Office365 online. Not offline. The only settings I see are these.
Plus, I'm not seeing the settings page you've shown above.

Sorry for the late reply. If you'd like to change the AutoCorrect language to English (United Kingdom), you must have English (U.K.) language configured in Windows Settings.
Then you can change the language settings in your Outlook or Word app via File > Options > Language. Please set up English(U.K.) as default language.
After these, the AutoCorrect feature will change the language.

Are you saying everyone in our school has to change it individually? That seems odd and unacceptable with lots of staff.
This must be to do with how it was installed with a US tenancy - please confirm.
Is there someone there who can give an accurate solution.
