Office saving fils to LocalCache instead of AppData\Roaming

A few days ago, I set up a new computer.  It came preinstalled with Office.  To avoid any issues, I removed office with the removal tool (found here: https://support.office.com/en-us/article/Uninstall-Office-from-a-PC-9dd49b83-264a-477a-8fcc-2fdf5dbf61d8), and installed Office 2016. 

It seemed to have installed fine, but when trying to save files to C:\Users\<user>\AppData\Roaming\Microsoft\Templates, the file disappears.  I found it actually save it to C:\Users\<user>\AppData\Local\Packages\Microsoft.Office.Desktop_8wekyb3d8bbwe\LocalCache\Roaming\Microsoft\Templates instead.

I then noticed in my installed programs list, I have Office Home and Business 2016 and Microsoft Office Desktop App installed.

My question:

If I uninstall Microsoft Desktop App, will this fix the issue?  From my understanding, I have 2 different versions of Office installed, but I only want the Home and Business version.

Looking at the list, I forgot to mention I installed Office 2007 as well.  All I want is Office 2016.

This is on an associate's machine that I can't access now.  If I can find a list of everything I need to keep (or rather, programs that can safely be uninstalled), I'll do it all at once next time the machine is available.

Have you got an answer to your problem and if yes how do you manage. ?

I am facing the same problem with one of my customer installing Office 365 and having the Addins under

   C:\Users\<profile>\AppData\Local\Packages\MicrosoftOfficeDesktop_8wekyb3d8bbwe\LocalCache\Roaming\Microsoft\Addins

While my installation program is used to

   C:\Users\<profile>\AppData\Roaming\Microsoft\Addins
