I want to see the margins and to see individual pages with gray space in the middle.
I did try to default the view and make sure the pages size and margins size were correct and it didnt change anything.

Two factors are involved here:
You are using something other than Print Layout View (Probably Web Layout View)*, &
You have Text Boundaries enabled... Go to Word> Preferences> View to clear the check for that preference.
I don't know what you mean by "... did try to default the view..." as there is no setting or preference in Word for that purpose.

Then Charles has mentioned the other possibility. Your reference to margins was misleading.
Go to Word> Preferences> View to put a check in the box for White space between pages in Print Layout View.
The White Space also can be toggled on/off by double-clicking the top/bottom edge of a page or the line that separates the pages. The pointer takes on this appearance when in the right location:

It sounds like you might be using Word for the web in a web browser, rather than Word for macOS. Does this look familiar?
If you use Chrome or Microsoft Edge browsers, you should see a gap between pages. If you choose View>Ruler, it will give you an indication of the page margins.
