In my OneDrive file explorer I used to be able to right-click on a file and select 'copy link' to then send that link in emails and now the option seems to be gone. When I click 'share' it gives me the option to share it with other users, but I don't want to share it with anyone, I want to be able to copy the link into my own documents to be able to click on it and have the file open from there.

Can you confirm that the option you mentioned in your question is the same as I show on below?
It appears I have the option, may I know if this option disappeared recently?
may I know what is the version of your operating system and the OneDrive version?
Since I have the option please follow the below troubleshooting
"Please back up all your files before troubleshooting."
Unlink OneDrive: Click OneDrive icon from taskbar notification area >> settings >> unlink this PC.
3.Close OneDrive App.
4 .Clear File cache and account cache:
File cache: C:\Users\
Account cache: Control Panel\User Accounts\Credential Manager, please remove all "OneDrive" related and "Office" related accounts.5. Reset OneDrive sync App following steps in Reset OneDrive - Microsoft Support
6.Restart OneDrive and check if issue can be resolved.

In the meantime as a workaround please use below method to copy link.
