Hi. Title says it all. I am at a loss as to why this simple feature is not enabled in Sharepoint. Why can't we capture the email address or name of the person automatically? How do we go around this without creating a custom Flow.
Thank you.

Hi Mark,
Thank you for your reply. I also did a test with built-in Approval workflow in SharePoint Online, when there is a approve request, the approval workflow will create a task in a Task list in Site content. However, if you would need to determine the final approver and display in SharePoint list/library with a “Approver”, it seems that it didn’t be achieved in this way.
Based on my research and finding, previously some users were further customizing the workflow in SharePoint Designer since the built-in Approval workflow is based on the SharePoint 2010 workflows.
For your information:
How to show the approver's name and approval date
Unfortunately, start from August 1, 2020, Microsoft has retired SharePoint 2010 workflow which we can’t customize any more, and the workflow will also be removed soon.
For your information:
SharePoint 2010 workflow retirement
Hence, in long term view, I would recommend using Power Automate and the flow solution since SharePoint 2010 workflow will be removed start from November 2020.
More importantly, if you have any concern with my demo Automate flow above, please feel free to let me know.
Best regards,
Dihao

Hi Mark,
Thank you for posting your question in this community. If you are using the built-in Approval flow (Approval flow) in SharePoint Online, I am afraid the Approval flow is only provided the very basics feature.
If you need to display the approver information in the list column, you may have to create a custom flow by using Microsoft Power Automate based on my findings. Here are some information which I think it may help you.
For your information:
Add Approver to SharePoint Name/Group Field
Get Approver Name from SharePoint List
I have also did a test from my side with Power Automate Flow, which the results should also full your requirements.
Here is the flow structure I created in Power Automate. I created the flow based on the Power Automate template: When a file is added, approve file using SharePoint Content Approval with some further customization
In the last approval action, I added Update file properties action to get the Approver name in SharePoint document library column:
As the output, once the approver approves/rejects the file, the “Approver” column will display the name who approve or reject the document.
Best regards,
Dihao
