Experiencing Rendering Problem in Hyper-V Instance

I've been encountering a rather annoying issue with Excel 365 for some time now, whenever I restore out of my Hyper-V instance and return back to it.  The rendering is always out of place and I have to do some weird cursor placement to restore it as expected.  Here is the video of this in action:

(FWIW the "blackouts" are from me restoring out of full-screen into a window environment and then maximizing back into full screen)

I would really appreciate pointers on how to fix this.  And yes I have already tried repairing and have installed the latest version that was released today.

FWIW I have tried this with two video cards now and they both demonstrate this behavior:

GeForce 660 GTX

GeForce GTX 1050Ti
