Can someone explain what I can do to troubleshoot and resolve the styles under the "format as a table" button have completely disappeared in my Excel. Not sure how to check version but it is the newer Office 365.

As per your description, I just did a test from my side, and it seems work fine (I’m able to see different built-in Format as a table style) in Excel version 2107(14228.20226) Current Channel. See image below for your reference:
May I know does issue happened do specific Excel document? If you create a Excel file from scratch does you meet same abnormal behavior.
If the issue happens to all Excel files including a new created one, the issue is more related to the Office app itself or your computer environment. You can first try suggestions below to see the result:
1. Make sure you’ve updated Office to the latest version that some issues can be resolved with such method.
2. Try open your Excel in safe mode which allow you to safely use it when it has encountered certain problems
3. If still can’t work, please try to repair an Office application to fix the problem.
Meanwhile, as a temporary work around, you could work on your documents with Excel online to continuous your work.
In the meantime, I can’t reproduce the issue in version2107(14228.20226) Current Channel. To confirm whether this is a bug in a specific version, please provide us the version information. To check version: Open any Office e.g., Excel>File>Account>Product Information and capture a full screenshot and share here (Please mask your private message for protecting your private message) and we will be tested on that version and verify the result with you.
