Hello Aaron,
Welcome to the Microsoft Community.
As Windows defender is renamed to Windows Security now, it seems you want to put a shortcut to the Windows Security program on your desktop. You can try this method:
Right click on your desktop, click on 'New' -- 'Shortcut'
In the pop up window, paste this path into the input box:
%windir%\explorer.exe windowsdefender://appbrowser
Click on Next, and rename this shortcut as 'Windows Defender' or anything you like. Then click on OK.
Now you can access Windows Security by double clicking on this icon.

How do you put a Defender icon on the desktop?
here is the easiest way to put a Defender icon on Desktop .
open Run box (Windows+R)
Type shell:appsfolder
you will see all the application including defender
just right click and create a shortcut
