Based on your description, you would like to use accounting symbol "Rp Indonesian" in Excel 2016 for Mac. I suggest you refer to the steps below:
1. Go to Home> Accounting formats> More Accounting Formats.
2. Select Rp Indonesian in the Accounting window.
Besides, if you want to have Excel always use a specific currency symbol, you must change the currency symbol that is selected in the Regional Options for your mac before you start Excel. The setting is under the Language and Region controls of your System
Preferences, and you need to click the Advanced button on the Language and Region dialog box to get to the Currency settings.

Yoga
