- Can we use the document elements tab in a similare way as for the creation of the bibliography?

Can you please clarify what it is that you want to do & how it differs from normal citations? You might also have a look at the Type of Source list at the top of the Create New Source dialog to see if one of the options there might work for you.

A more robust citation feature is made by EndNote
Regarding annexures, perhaps you are thinking of the Index feature

Hopefully I guessed right at least once.

An Annexure is an attachment to a document that is not added in the document itself but only referred to in a reference.
For example:
I conducted 10 interviews. A list of the interviews are attached as "Annexure A", etc.
Then you prepare a file with your document and add all your annexures after the document from Annexure A to Z (or whichever is your last).
The issue here is: I am referring to 30 Annexures in my document, however, in order for me to list all these documents as part of my index I have to manually go through the document and list each of them.
stevemann12 is asking if there is any way that you can generate such a list like you would generate a Table of Contents.

The short answer is that Word can do what you are asking for if you use styles. The general procedure is outlined here:
http://www.dummies.com/how-to/content/word-2011-for-mac-make-a-table-of-contents-automat.html
I think if you set up your styles properly you could have Word automatically create a TOC that does what you are asking about.
