Microsoft Edge might have a different language than your Windows default language

If you run into a situation where your downloaded Microsoft Edge browser is in a different language than your Windows default language, you can recover by uninstalling Edge, and reinstalling it using the following steps.

1. From Start, search for control panel. Select Control Panel from the results, and then choose Uninstall a program.

2. Find Microsoft Edge in the list and select Uninstall

3. When the Uninstall Microsoft Edge dialog appears, check the box next to Also clear your browsing data

4. Select Uninstall.

5. Wait for the uninstall to finish.

6. Re-download and install the desired version from  https://www.microsoft.com/edge. Important If you run the same installation file you downloaded previously; you will get the incorrect language again. You must download a new installation file with the correct language.

Note If you are already set Edge to sync, when you re-install and setup sync again, all your favorites will be imported.

I don't have the option to display Edge "in this language". I'm on macOS and running version 79.0.309.65.

The browser loaded in Spanish. I navigated to langues setting and had it display in USA English, (so far so good), but when I go to websites many come up in Spanish and I have to have it translate to English. Not unworkable, but a little annoying. Apparently there is a switch or cookie or something that shows I am Spanish speaking. Is there a way to change that? I have uninstalled and re-installed a few times checking the box to delete browsing data, but seems there is something out there still showing Spanish as default.

For me it installed in Japanese.  I went to the language settings in Edge and changed it to English (Australian).  I still see some Japanese text in the task bar though.

I had the same problem as Edge installed in Italian.  Once you add the language if missing is that to the right of the language name you'll note 3 dots.  Click on the dots next to your language and check the top box.  I also clicked the dots next to the languages that were also shown (variations of Italian) and clicked on the trash can to get rid of them.  I also enable the spellcheck for the English language as well.

Lastly, to make the changes effective you need to exit Edge and then reload it.

If you have done some settings, without knowing the language, you can uninstall the new MS Edge and install it again.

I got chinese when I tried to installed.  Sharing the fix via my screencast notes

I had the same problem, no language settings in Edge version 44.18362.449.0

Installing an additional Windows language, changing to that language then changing back changed Edge's language.

Are you willing to do this? What's your current Windows language? What's the incorrect  language in Edge?
