Why Microsoft Forms have very limited types of questions for Quizzes.
The only option for Quiz questions is multiple choice. When are you planning to add more options like: Matching, fill in the blanks, timetables, etc. Many teachers in the US (and probably around the world) are now using Microsoft Teams and we are in need
of more resources. Can you help?

According to your description, it seems that you want to add more types of Quiz questions like Matching, fill in the blank, timetables in Microsoft Teams.
If so, you mentioned “fill in the blank, timetables”, does it mean that you want to add Text and Date question types? If so, and if those teachers are the owner of the class team, they can go to channel > click Add a tab + > Under Tabs for your team,
click Forms > you can select Create a shared form that your team can edit or Add an existing form, then you will found some types of Form, as shown below:
However, we’re afraid that there is no out of box way to create Match question in Forms in Microsoft Teams. We’re sorry that it doesn’t meet your requirement.
I do understand the inconvenience it has made and apologize for it.
To address your concern about the situation, we’d suggest you go to
Microsoft Teams UserVoice to provide your feedback. This is the best platform to let us hear from you and make our products and services better for you and others.
Your understanding and patience will be highly appreciated.
