You can navigate to the below mentioned path to Back up favorites of Microsoft Edge.
* Open This PC
* Navigate to, C:\users\User Profile\App Data\Local\Packages\Microsoft.MicrosoftEdge_8wekyb3d8bbwe\AC\MicrosoftEdge\User\Default
Note: User Profile will be name you User account.
* There you can find "favorites" folder. Copy the Favorites folder to desired location to make backup.

AppData is a hidden folder so enable the viewing of hidden folders in File explorer first
I see the Microsoft Edge/favorites but it is not the up-to-date list.

As I understand it, Edge has now changed its behaviour. Its Favorites are now saved in a database instead of as separate shortcuts in a folder [i.e. it is no longer done the IE way].
I have not been able to find any Microsoft confirmation of this but did find a reference to the change along with revised procedures for backing up Edge Favorites in TenForums -
